Vegan mofo day 28, sharing my love of Vegan Sushi!

Even though I was very skeptical and almost afraid to try sushi for the longest time, as I hated anything "fishy" went I was an omnivore many moons ago. But for the sake of being a true "foodie" and being adventurous I made sushi and tried it for the first time, here is a picture of my first ever batch of sushi. I put carrot, avocado, cucumber. I also made my own pickled ginger, as the only ones I could find at the grocery store had lactose in them which is terribly un-vegan!


Here is my most recent batch of sushi rolls, cucumber, green onion, cilantro, avacodo, and sweet potato tempura. All this food was for two people, and some was leftover... I'm not quite that pig-ish... lol
To round out the protein portion I pan fried some cubes of tofu in about a tsp or less of oil, and added some sweet thai chili garlic sauce, which I was have on had, I also added some soy sauce, and after the sauce thickened up, I added some cilantro, green onion and sesame seeds. This was so simple, but such a yummy complement to sushi!
Plain lightly sauteed veggies with a touch of soy sauce and sesame seeds.

I love love sushi, and this one of my favorite homemade meals in ages!
