I have so busy with all the Holiday Stuff, that I completely neglected my blog!
But now I have an update with some food I've made this past couple of weeks.
I made a lasagna, with homemade sauce with lentils(like a meat sauce), tofu ricotta with spinach, with Vegan Gourmet on sprinkled on the top.
Here is a slice shot... This was delicous but the lentils were a tad undercooked.
Roasted cauliflower soup, with a balsamic reduction drizzle and a sprig of parsley.
Yellow Thai curry with pineapple.
Homemade falafel balls with Homemade Indian yogurt raita, olives, cukes, tomatoes, peppers and spinach. All on a homemade tortilla. This was DEEEE-lish!
I made this awesome HUGE loaf of bread that almost spilled over the sides. This was amazingly crunchy on the outside and fluffy and soft in the middle.
Sweet potato chipolte soup, with curry powder and coconut milk. I sauteed some onions and garlic plus tempeh and mushrooms. With white wine S+P, with a whole big bag of spinach. This was a great way to eat spinach.
