Happy Amercian Thankgiving! Curry and Thai salad!

Happy Thanksgiving to all my US readers, here is to more turkeys being "adopted" then eaten! I hope you all have a great long weekend.
This was a meal of leftovers, someone gave us vegan samosas and then I had some black beans and cooked sweet potato in the fridge. This had madras curry powder lots of ginger, coconut and fresh cilantro. For something I threw together last minute it was surprisingly delicious and something I would definitely make again. On the side as a dipping sauce for he samosas I used some mango orange juice that I had and combined it with ginger and Thai sweet chili garlic sauce.



This salad had pineapple, celery, broccoli, peppers, carrots and peanuts. I made a "Thai: Style dressing with some red curry paste and black sesame seeds with mango orange juice and a few other things.

Now that's a much more creative use for leftovers than your standard day-after sandwich. Love it!
