Here's a few things I have made after I got back from Ottawa! I will post some pictures of Ottawa tomorrow. Today is about food.
This is what I call a "Spring-time" Risotto, with Dijon-white Balsamic roasted Brussel sprouts and tofu. The risotto had local Asparagus, mushrooms, lemon juice and zest, and arugula.
I made this delicous (all-dressed) pizza, with Yves veggie pepperoni, onions, and peppers, and olives. With my Vegan "Cheesy" sauce, this is my go-to cheesy sauce for pasta/pizza etc.
I served it alongside, a green salad with my homemade Honey Mustard dressing. And a steamed artichoke with melted EB on the side.
I also tried something new that was pretty good, but not spectacular. I made a batch of my tofu scramble with potatoes, onions and garlic in it.
I served it in taco shells with all the veggies (Tomatoes not pictured, but I had some of those too) plus some extra limey guacamole with cilantro.
Here is the tofu scramble "tacos" in corn tortillas.

good idea to put tofu scramble in a tortilla! i've obv heard of breakfast burritos, but that's more of a breakfast taco!
The risotto sounds wonderful! And that pizza looks delish. I need to make vegan pizza again soon. It's so good! Also, love the scramble in a taco idea....
