Mothers Day, Vegan Whipped Cream, Vegan Vanilla Poundcake, And Vegan Steaks... Oh My!

I've seen so many Mother's Day posts, I've decided to make one too!
I made wholegrain waffles, and served it with Pineapple and Bananas, Earth Balance and real Maple Syrup. I am totally not used to this blogging thing, yet so I forget to take some pics. (but I'm sure you all know what waffles look like, lol)

I also made dinner for her on Monday night, which she requested my Vegan steaks, with a mushroom onion saute, and red wine gravy. Served alongside mashed potatoes, and steamed broccoli.




For dessert I made a cake (any excuse to make cake). It Turned out pretty ugly, but it was really tasty! 2 layers of Vegan Vanilla pound cake, with thawed frozen strawberries with a little sugar, in the middle layer and on top. With homemade Vegan Cashew-Coconut whipped cream (I'm still working on perfecting the recipe, although its getting very close). Drizzled with Mango Coulis. Although the cake is as ugly as can be, it was very tasty!





My Sunday night supper was a big ol' pan of Vegan Nachos(don't worry I didn't eat it all! My boyfriend and I shared it), w/ vegan Mozza, and Vegan "American" cheese slices. With Olives, onions, garlic, peppers, pickled Jalapeno Peppers, and the bowls in the background have homemade salsa, Guacamole (which is the best condiment ever!)
And then some Vegan plain soygurt (lower-cal then, sour supreme). And then 4 artichoke halves each.



Question of the "Blog": when did you realize that you became "veganized"?

My answer:
I realized I became "veganized" when I started putting Nooch (nutritional yeast) on almost EVERYTHING. When I first went Vegan a year ago, I hated the stuff! Now I think it could make feet taste better. Lol.

Funny you say that, I also put nutritional yeast on almost anything. Particularly in salads and pasta. Curious, what did you use as the "vegan steak?" Sounds tasty!

I don't think I ever realized I was veganized...haha, it just seems normal to me!!

Vegan steaks!!! I wanna know how to make that! And the nachos sound terrific. Nachos are, like, my favorite food of all time.

Hey Sophia! Those nachos look so good - I've been dying for some vegan nachos recently!!! And the mango coulis for the poundcake sounds so gourmet. Yum. Poundcake was one of my family's favorite desserts when I was growing up, and I just recently made the recipe from Veganomicon for my cooking class. It's so good! And you are a great daughter for making all those yummies!

hey sophia! welcome to the veg blogging community! thanks for your comment on my blog. it's awesome that you're taking on the veganization of old favorites as your mission! i look forward to seeing what you come up with! my favorite "go to" meal is just a giant salad with lotsa random fruit, veggies, and beans, or maybe some leftover baked tofu. as long as you have a nice dressing on hand (i make my own in large batches..usually from eat drink and be vegan) it will be an awesome, easy, and healthy meal.
